Leftovers Frittata in 5 Steps

Tim takes a wedge (or 2) to work for his late morning snack 😋  Great way to use leftovers. And I add Almond Flour to give the frittata a bit more texture and substance đŸ’ĒđŸŊ

Equipment: 

10" - 12" Ovenproof Skillet, Bowl, Whisk, Spatula, Measuring Cups & Spoons.  

Preheat Oven to 400 F

  1. Place enough leftovers (meat, veggies, whatever your desire 😉 ) to cover the pan. Cook over medium or medium-high heat. If no leftovers & using raw meat, then cook that in the pan first. And Season to taste.
  2. Optional to add cheese if allowed with your 21DSD Level or not "sugar detoxing".
  3. Place 6 - 8 eggs (enough to cover ingredients in a bowl. Add 1/4-C Almond Flour, 1/2-tsp Baking Soda, 1-tsp Cream of Tartar. Whisk until well-combined.
  4. Pour over ingredients. Tilt pan to make sure eggs settle evenly over all ingredients. Cook for a minute or two until you see edges of eggs beginning to settle.
  5. Put entire pan in the oven & Bake 8 - 10 minutes until eggs are set. Check for doneness: Cut small slit in the center of frittata. If raw eggs run into cut, bake few more minutes. If eggs are set, remove from oven. Cool 5 minutes, then slice into wedges.
