Believe it or not, I literally just tossed this recipe together. Only using food that I already had. This is what's fun about "Recipe Improv". All you need is to look in your kitchen and be inspired. And btw - I used 100% organic whole grain brown rice pasta. So yes -- you can eat pasta and keep it Real!
It's tomato season. And my CSA is chock full of these beautiful gems!! But we simply can't eat them fast enough. So a day or so before I pick up our next box of veggies, I'll roast what's left in the oven. Roasting them concentrates the flavors for a different tasting experience. And a great way to keep savoring these meaty morsels.
