It's been awhile since I've posted a Food For Thought Friday. And I want to continue the thread about sustainable meat. So here's a recommendation for learning more about the concept. Enjoy!
Cooking 100% grass fed, pasture-raised meat is different than conventionally raised meat 🤔 I didn't realize. So my initial attempts were failures 😝😳 And because of those experiences, we had doubts whether this lifestyle was possible 😬😟
Then I found Good Meat. A book written by James Beard Award Winner Deborah Krasner. This quickly became my Meat Bible 🙌🏽🙏🏽👍🏽😊
The book is a complete guide to not only understanding the concept of sustainable meat: Beef, Lamb, Pork, Rabbit, Poultry, and Eggs 💯🌱🐄🐏🐖🐇🐓🍳 But also how to source it more affordably by buying in bulk directly from farms. Shoutout to Pike Valley Farm located in Lancaster, KY! And practical information such as explaining the various cuts of meat for each animal and how to complete a "cut-sheet".
Ms. Krasner also provides basic cooking methods and lots of great recipes designed for this type of meat. Some recipes need to be adapted if you follow Paleo diet.
There is just enough information to absorb and not be overwhelmed. And Ms. Krasner's writing is clear, concise and very approachable.
